CEVICHE HISTORY
According to history, 2000 years ago the Peruvian native Culture called Mochica or Moche used to prepare a dish. It used to have fish cooked with Tumbo Juice. Tumbo (Passiflora tripartita) is a fruit similar to the passion fruit, but pretty sour. At the Incas period, the fish used to be macerated with Chicha.
So, when the Spanish people invaded the kingdom, they brought Lemon and Onion. Therefore, it is the Traditional Peru Ceviche that everybody knows.
According to the historian Juan Mr. Jose Vega, Ceviche comes from the Arabic word Sibech, which means acid food. Hence, when Francisco Pizarro came to the Inca Kingdom, he brought some Arabian ladies who used to mix the fish with sour oranges, afterward, lemon juice. In the native Quechua Langue, fresh fish is called SIWICHE.
This means that the ceviche dish was born in Peru.

The Cevicherias are the restaurant that traditionally we call to the restaurant that only makes Ceviche. In all Peru, especially on the Peruvian coast wherever you go, always you will find Cevicheria Restaurants. There are many Peruvian Restaurants all over the world.
